MINCE TORTILLAS

Tortillas

cups finely ground cornmeal
2
cups plain flour

g butter

cup water

tablespoon olive oil

grams chicken, lamb or pork mince

grams Goa Sausage

large onions, chopped
2
medium green capsicum, seeded and chopped

cup tomato paste

cups grated Cheddar cheese
1.
Preheat oven to moderate 180 degrees centigrade.
Brush two oven trays
with oil.
2. Place cornmeal, flour and butter in food
processor. Using pulse action,
press button for 30 seconds or until mixture is fine and crumbly.
Add
the water and process for 10 seconds or until mixture is combined to a
soft dough. Turn onto lightly floured surface and knead till smooth.

Divide dough into 16 portions, roll each out to a 10 cm circle.
Place on
oven trays and bake for 15 minutes.

Heat oil in a heavy based pan, add mince and finely chopped Goa
Ssausage
and stir fry over medium heat for 10 minutes until well browned
and all liquid has evaporated. Add
onion and capsicum and stir fry till
vegetables are tender.
5.
Spread tortillas with tomato paste, top with mince mixture, sprinkle with
cheese and bake for 10 minutes until lightly browned.
